Having had the good fortune of dining all over Italy, the memory of my first pork-chop with chicory gently cooked with garlic and chili in Greve in Chianti travel with me as a constant reminder of why I, and probably the rest of the travelling world love Italian food. It’s all about the flavor and the more seasonal the ingredients with a simple preparation and cooking, the better the flavor it seems to me. Get off the main tourist routes and wander off the beaten track, along roads that lead to country towns and villages where you will discover the sort of cooking we visitor’s to Italy seek out; local, traditional cuisine! The more local the Trattoria or Osteria the better, and if you have the good fortune of being befriended by the owner or a few residents of the village enjoying a meal at the same place, then another type of magic attaches itself to the meal? That’s the magic of laughter, with great food, a decent local wine and new friends.
